ICÚ opened in December 2017 in Puerto Vallarta. Giving birth to a long-time dream from our chefs Josue Jimenez and Mauricio Leal. The word Icú (e – koo) means corn in Huichol language. As corn is such a vital ingredient in Mexican cuisine, it is broadly used by our chefs in our ever-changing menu.

Our menu is based on dishes that both our chefs grew up with. Being Puerto Vallarta natives, seafood plays a big part. One can find traditional recipes intertwined with contemporary techniques and the most fascinating product.

Seasonality plays a considerable part in menu design. The menu is constantly being tailored to showcase the finest ingredients available.

Diners have a choice between experiencing a 5 or 9-course dinner, as well as an a la carte menu. A very amusing wine pairing is available for pre-fix menus, which include red and white wine, as well as local beers and spirits.
