Puerto Vallarta, Jalisco, June 23, 2026 – Restaurants in Puerto Vallarta and Bahía de Banderas are heading into summer with a harder set of numbers behind the menu.
Food costs are still rising. Tourism traffic has softened. Many operators now face the same question. Raise prices, cut costs, or absorb another hit to profit margins.
Canirac Puerto Vallarta-Riviera Nayarit president Martha Parra Vargas said higher supply costs are putting heavy pressure on local restaurants. Each business is deciding how much of that increase it can pass on to customers.
The menu math is getting tighter
Mexico’s headline inflation has cooled, but that does not mean restaurant costs have settled.
Banco de México’s inflation portal shows annual inflation at 3.94 percent in May. Core inflation stood at 4.19 percent, which matters because it reflects prices that tend to move more slowly.
For kitchens, the national average only tells part of the story.
The federal food-price report for May showed overall food inflation at 3.27 percent. But individual ingredients moved sharply. Potatoes rose 12.68 percent in one month. Avocado rose 5.15 percent. Lettuce and cabbage rose 2.83 percent.
On an annual basis, tomatoes were up 99.2 percent. Potatoes were up 57.3 percent, according to the May food inflation report.
That is why diners may see targeted menu changes instead of broad price hikes. A restaurant can benefit from lower prices for chicken or eggs, but then lose that gain through higher produce, rent, payroll, utilities, delivery fees, or financing costs.
Summer demand carries more weight this year
Parra said the sector is looking to summer visitors for relief. In a seasonal market, fuller dining rooms can help restaurants spread fixed costs across more sales.
That relief is not guaranteed.
Some local restaurants are already trimming staff days as tourism slows. At the same time, Puerto Vallarta airport traffic fell sharply in May, adding another weak signal before the summer travel period.
Softer traffic makes inflation harder to manage. Restaurants have fewer busy nights to offset higher costs.
For diners, the change may not always look like a new menu price. It may show up as fewer specials, smaller promotions, tighter staffing, shorter hours, or a stronger push toward higher-margin dishes.
Financing and training enter the conversation
Canirac has been bringing financial institutions into local meetings, including Nacional Financiera and Bancomext. The goal is not only credit. It is also better cost control during a period when many restaurants have less room for error.
Parra said restaurants must be “very well administered” while expenses remain unpredictable.
Nafin’s business training platform offers support in financing, business development, cost control, customer service, and financial management for small and medium-sized companies.
That type of support matters in a local sector built largely on small operators. Restaurants are employers, buyers, and part of the daily economy in neighborhoods across Puerto Vallarta and Bahía de Banderas.
Nationally, the restaurant industry generates 2.4 million direct jobs, according to Canirac.
Price changes will not hit every table the same way
The next round of menu changes will likely vary by restaurant type.
Seafood restaurants, taco stands, cafés, breakfast spots, beach clubs, and fine-dining restaurants all buy different products. A kitchen that depends heavily on produce or imported ingredients will feel inflation differently than one built around a smaller local menu.
Some restaurants will raise selected dishes. Others will redesign menus, reduce specials, or try to protect regular customers for as long as possible.
For now, local restaurants are trying to keep tables full, protect staff hours, and make the numbers work before the next slow stretch arrives.
