Who is cooking at Vallarta’s eight-chef gala on Oct. 6?

Puerto Vallarta, Jalisco, Oct. 4, 2026 — Gaviotas restaurant will host eight chefs for an Oct. 6 gala dinner during Vallarta Nayarit Gastronómica, organizers announced.

The announced presale price is 2,980 pesos. The gala poster specifies formal dress and an 8 p.m. start.

The poster lists reservations at 322-226-0404. The Sheraton Buganvilias is located at 999 Boulevard Francisco Medina Ascencio, in the Las Glorias hotel zone.

Reservations and arrival time

For residents planning to attend, the organizers’ materials contain a scheduling discrepancy.

I compared the gala poster with the downloadable official program and found different start times. The program lists 7 p.m.; the poster lists 8 p.m. Diners should confirm their arrival time when reserving.

The program also distinguishes private dinners from congress admission.

“Access to these events is separate from the congress, with an additional cost and limited capacity,” organizers state in the program, translated from Spanish.

Jalisco’s official tourism listing prices Tuesday’s congress pass at 1,800 pesos and the two-day pass at 3,500 pesos. Those packages cover daytime activities. The listing separately offers a 12,000-peso premium package that includes dinners and congress activities.

Three Puerto Vallarta chefs on the roster

The organizers’ chef directory identifies three gala participants with Puerto Vallarta kitchens: Carolina Arriaga, Miguel Salmerón and Mauricio Leal.

The gala poster names these eight chefs and their participating restaurants or hotels:

  • Carolina Arriaga — Gaviotas, Puerto Vallarta.
  • Miguel Salmerón — Sheraton Buganvilias, Puerto Vallarta.
  • Mauricio Leal — Icú, Puerto Vallarta.
  • Rubén Sánchez — Epílogo, Spain.
  • Rodrigo Rivera Río — Koli, Nuevo León.
  • Mikel Alonso — Cocina de Autor, Riviera Maya.
  • Luis Ronzón — Ixi’im, Yucatán.
  • Maycoll Calderón — Acre, Los Cabos.

The poster also lists mixologists and sommeliers associated with Beva Club, Ciudad Juárez, Vinos América and Vinos Insuport. It credits Naty Toledo, representing República del Cacao, with the small sweets served as mignardises.

Local cooking in the daytime program

The dinner forms part of the Oct. 4–7 Vallarta Nayarit Gastronómica gathering listed in PVDN’s events calendar. Organizers identify Sheraton Buganvilias as the main venue.

Beyond the evening dinner, the official workshop schedule includes sessions led by local participants on Tuesday.

Jorge Carbajal and chef Carlos Carbajal of Mariscos Tinos are scheduled to present pescado zarandeado from 9:30 to 10:15 a.m. The grilled-fish session takes place at Explanada Gaviotas.

The same schedule lists Puerto Vallarta paella cook Mario Mid for a workshop from 1 to 1:45 p.m. These daytime sessions are part of the congress program and have separate access terms from the gala dinner.
